Warm Mustard Potato Salad

Taking advantage of the new potatoes in season and our addiction to Dijon mustard. I served this to a guest last weekend who declared, “This salad is rockin’ good!”

WARM MUSTARD POTATO SALAD                        serves-8-10                 

2 lbs. small red potatoes, cooked tender

1 C. mayonnaise

1/4 C. Dijon mustard

1/2 C. chopped red onion

2 green onions with tops, sliced

2 tsp. minced garlic

3 Tbs. snipped fresh dill or 1 Tbs. dill weed

1/2 tsp. salt

1/2 tsp. pepper

1/4 tsp. lime juice

Drain and cool potatoes, slightly. Combine remaining ingredients. Cut potatoes into chunks. Toss with dressing. Serve warm.
