Cucumber Salad

This is a cool and refreshing side dish. The marinade takes most of the spicy out of the onions, but your six year old might not believe that. I was excited to make this again because all the cucumbers and tomatoes came from our own garden!

CUCUMBER SALAD                        serves 8

2-4 large cucumbers, thinly sliced

1 tsp. salt, divided

2 medium tomatoes, chopped or about 2 cups halved cherry              


1 medium onion, chopped.

1/4 C. cider vinegar

2 Tbs. olive oil

1 Tbs. honey

1/2 tsp. celery salt

1/2 tsp. dried basil

1/2 tsp. dry mustard

1/4 tsp. garlic powder

1/4 tsp. dried oregano

dash cayenne pepper


Place cucumbers in a strainer; sprinkle with 1/2  tsp. of salt and toss. Let stand 30 min. Rinse and drain well. Place in large bowl; add tomatoes and onion. In small bowl, whisk together remaining ingredients; pour over vegetables and toss. Cover and chill several hours. Serve with a slotted spoon.
