Chicken Salad

This is perfect for picnicking or for a nicer than usual lunch, when you expect guests. I recently found out this is one of Mike’s favorites. 


4 C. diced cooked chicken

1/2 C. toasted pecans

1/2 C. chopped green onions

1 C. chopped celery

1/2 C. mayo

1/2 C. sour cream

2 Tbs. lemon juice

1 tsp. salt

1/2 tsp. pepper

(serve with tomato wedges or in a sandwich)

Combine chicken, pecans, green onions and celery. In small bowl combine remaining ingredients to make dressing. Stir into the chicken and chill until ready to serve. Serve with tomato wedges.
